Rena is a great cook. Her specialties range from Chicken Meatballs to Eggplant Wraps and more. We are going to start posting some of our favorite recipes when Rena returns from her first 1/2 marathon.
Her chicken meatballs are one of my favorites! You wrap them in lettuce with a sprig of cilantro and mint, a pinch of red onion and pickled cucumber and top it off with an Asian sweet and sour sauce. Did I mention there is garlic and lemon grass in the meatball? YUM!!!!
Because of Rena’s new appreciation for calories, she often makes adjustments to recipes to cut the fat, sugar or extra calories. It was her amazing cooking that also inspired me to want to write this book. You can enjoy healthy food that tastes amazing AND lose weight! We’ll help you!
